Aki, let’s be honest.
It’s almost sacrilegious to eat meat in Njaanuary. This is the month of self-reflection and deep thoughts about the unnecessarily expensive price of meat, and oh, how this year, you will adopt a healthier, meat-free lifestyle that will manifest self in glowing radiant skin and a dazzling cruelty-free smile.
That being said, transitioning from a 7 days a week nyama choma extravaganza, into a vegetarian lifestyle, is quite frankly, hard, but fear not, as always, we got you covered with this easy egg dish. Everyone will assume you MEANT to cook egg instead of meat, that’s how good this is
1 medium-sized onion
2 cloves of garlic
½ an inch of ginger
2 tablespoons whole cumin, lightly crushed
1 curry leaf/ two tablespoons curry powder
2 ripe tomatoes
¼ cup of tomato paste with water to mix
1 carrot, cubed
¼ cup of peas (optional)
1 bunch of coriander (dhania)
Soft boil eggs, let them cool and peel.
Start with frying your cumin in hot oil, add onions and sauté until golden brown. Add in minced garlic and ginger and cook until fragrant.
Add tomatoes and cover.
Dissolve your tomato paste in equal parts water and mix into your cooked tomatoes. Let it simmer for two minutes, to allow the tomato paste to cook. Add a pinch of salt to taste.
Cook in your potatoes. If your potatoes are pre-boiled, just add it together with the peas and carrots.
Add more water as desired and add in the carrots and peas. Once the carrots and peas are slightly cooked, add the peeled eggs and let simmer for another minute.
Serve hot with chopped coriander and a side of fragrant cumin rice, or chapo!
